QUICK BLUEBERRY MUFFIN RECIPE

Serves 1 and takes 5 minutes to cook.
15 grams of protein
27 grams of carbohydrates
25 grams of fat
5 grams of fibre
1 tablespoon coconut flour
1 tablespoon almond flour
1 tablespoon oat flour
2 tablespoons granulated sweetener of choice
1/2 teaspoon baking powder
pinch of cinnamon
1 large egg
1 tablespoon mashed banana or pumpkin
1 tablespoon semi-skimmed milk or dairy alternative
2-3 tablespoons frozen blueberries
In a small bowl, combine all the dry ingredients and mix well. Add the egg, mashed banana, milk and mix until fully incorporated. Fold in the blueberries making sure you can a few poking out the top.
Microwave for 50 seconds (850W)
